Ingredients
- 5 cardamom pods

- 1/2 tsp fennel seed
- 5 star anise pods
- 1/2 tsp cassia chips
- 5 cloves
- 1/4 tsp black peppercorns
- 1 chopped vanilla bean
- 1/4 tsp angelica root
- 1/4 tsp burdock root
- 1/2 tsp cacao nibs
- 2 cups high-proof dark rum or bourbon
Directions
- Combine Ingredients: In a quart-sized mason jar, add all ingredients except the high-proof alcohol.
- Add Alcohol: Pour in 2 cups of dark rum or bourbon, ensuring all ingredients are submerged (add more alcohol if needed).
- Infuse: Seal the jar with a lid and store it at room temperature, away from direct sunlight. Allow the mixture to infuse for 2-4 weeks, shaking the jar daily to mix the flavors.
- Strain: After the infusion period, strain the mixture into a clean jar using a coffee filter-lined funnel to remove solids.
- Bottle: Transfer the liquid into a colored glass bottle for storage. While the bitters can last indefinitely, they are best used within a year for optimal flavor.
